At the helm of Château de Massillan’s kitchens, the Chef expresses a rare culinary sensibility: that of a chef who listens as much as he creates.
Having trained with renowned establishments and passionate about Mediterranean terroirs, he crafts a natural, bold yet clear gastronomy, where each product finds its balance in simplicity.
Sébastien envisions his dishes like composing a melody:

He works hand-in-hand with the kitchen garden team, closely follows the garden’s cycles, anticipates harvests… and lets nature dictate the menus.
